Ambari Goda Masala is a traditional Maharashtrian cuisine with aromatic spices that lend a subtle sweet aroma without hints of pungency or heat.

Ingredients:

• 1 cup sprouted moth beans (matki)
• 1 onion, finely chopped
• 1 tomato, chopped
• 2 tablespoons Suhana Ambari Goda Masala
• 1 tablespoon oil
• 1/2 teaspoon mustard seeds
• A pinch of asafoetida (hing)
• 1/4 cup chopped coriander leaves
• Salt to taste
• Pav (bread rolls) for serving

Recipe:

• In a pan, heat oil, add mustard seeds, and let them splutter. Add asafoetida.
• Add chopped onions and sauté until golden brown.
• Stir in Suhana Ambari Goda Masala and cook for a minute, allowing the spices to release their flavours.
• Add chopped tomatoes and cook until they are soft and the oil starts to separate.
• Add sprouted moth beans, salt, and a cup of water. Cover and simmer until the sprouts are cooked.
• Garnish with chopped coriander leaves.
• Serve the Misal hot with pav. Optionally, garnish with farsan (spicy mixture) and chopped onions for added texture and flavour.
