A perfect Spice blend for the popular South Indian lentils and Vegetable stew A South Indian meal would not be complete without sambar (Pronounced Saambar), a deliciously thick lentil stew overflowing with healthy vegetables like pumpkin, aubergines and drumsticks. Can be eaten with rice as a main course, or as an accompaniment to breakfast dishes like Idli and dosa. Sambar 1- Soak 100g Toor dal in 1 cup of water for 15 minutes, Strain and pressure cook the dal for 20 minutes with 3 cups of water, 1 diced onion and ½ tsp turmeric powder. Mash it needed. Separately cook 150 brinjal, 150g pumpkin in 1 cup of water till soft. 2- Heat 2 tbsp oil in a wok or saucepan. Add 1 tsp mustard seeds, 3-4 whole byadgi chillies and curry leaves. Stir-fry for 30 seconds. 3- Add cooked and mashed lentils and some water if required. Add 2 ½ tbsp Suhana Sambar Masala. Add cooked vegetables and bring to boil. 4- Add tamarind paste, salt as per taste and simmer for 5 minutes.
